Lentil and Turnip Soup

 

Ingredients:

  • 2 Tablespoons olive oil
  • 1 Yellow onion, diced
  • 4 Cloves garlic, minced
  • 3 Celery stalks, diced finely
  • 1 1/2 Cups tomatoes, chopped
  • 1 1/2 Cups dried red lentils
  • 1 Turnip, peeled and diced
  • 1/2 Cup Fresh flat-leaf parsley, chopped
  • 1 Teaspoon red-wine vinegar
  • Coarse salt and freshly-ground pepper
