Apricot Bars

Ingredients

  • 1 1/3 cups brown sugar
  • ½ cup non-hydrogenated vegan shortening (Nutiva is good or use Earth Balance)
  • 2 flax “eggs” (2 T. flax meal + 6 T. water)
  • 2 tsp. vanilla
  • 1 ½ cups white flour
  • 2 tsp. baking powder
  • ½ tsp. salt
  • ½ tsp. cinnamon
  • ¼ tsp. cloves
  • ¼ tsp. nutmeg
  • 1 cup chopped dried apricots
  • ½ cup chopped nuts (walnuts)
  • ½ cup vegan chocolate chips

Instructions

Lightly grease a 7 x 11” pan and line with parchment paper. Cream sugar and shortening together. Beat in flax mixture and vanilla. Whisk together dry ingredients and beat into shortening mixture. Fold in apricots and nuts. Spread into prepared pan. Bake at 350° for 20-25 minutes. Remove from oven. Sprinkle chocolate chips on top. Put back in oven for a minute. Spread melted chips over bars. When completely cool, carefully lift from pan. Cut into bars. Makes 32 – 48 bars*

*For attractive bars, trim edges, then cut 12 rows of 4. If cut this way, there would be 48 bars at about 60 calories each.
